Vegan Shish Kebabs
Several vegan favorites, all cooked on a stick and served on a bed of Israeli Couscous– a summertime fave.
Ingredients

Israeli Couscous
1pckg(7 oz)
TofuI used Trader Joe's® Sriracha Flavored Baked Tofu, cubed into 9 equal pieces

Vegetarian Italian Sausagecut into 8 equal pieces (I used Tofurky Italian Sausage)

Cooking Instructions
step 1
Cook Israeli Couscous (1 pckg) as directed on package.
step 2
Add Greek Seasoning (1 tsp) or salt and pepper or other desired spices to taste.

Cut Corn Cob (1 ear) into 4 equal pieces and steam covered with water in microwave or stovetop until done about 3-5 minutes.

Add 3 pieces of Tofu (1 pckg), 3 pieces of Vegetarian Italian Sausage (1), 2 corn pieces, Onion (1/2 cup), and Mushroom (1/2 cup) as desired to each skewer. Cook on an outdoor or indoor grill, in a broiler, or in a pan until done, rotating as needed.

Add 1/2 cup cooked couscous to a bowl, pull cooked food off of skewer onto couscous. Serve and enjoy!
