Vegan Zaru Soba (Cold Soba Noodles)
Soba is thin, brown noodles made from wheat and buckwheat. The sauce is made from a dashi base, with a bit of mirin and light soy sauce. With this recipe, create the vegan version of Cold Soba Noodles at home.

Cooking Instructions

Heat Water (3/4 cup) in a medium-sized saucepan on high heat until it starts to boil. Add in the Kombu (2 tsp) and reduce to medium-low heat. Cover the pan with a lid and simmer for 10 minutes.

Drop in the Dried Shiitake Mushrooms (3 tsp) and cook for another 10 minutes.
