Very Crispy Potatoes
Look there are great ways of making great crispy potatoes, but that takes effort! And sometimes we just don’t feel like the effort, these potatoes are effortless, really crispy and, the best part, utterly delicious!

Preheat oven to 400 degrees F (200 degrees C).

Boil Baby Potatoes (15) in salted water till tender to a knife.

Strain, and place on a roasting tray.

Drizzle with Oil (2 Tbsp), and toss to coat.

Mash gently with a potato-masher.
step 6
Season lightly with Salt (1 tsp).
step 7
Separate the Butter (1 Tbsp) into little knobs. Add knobs of butter on each potato.

Sprinkle generously with freshly grated Parmesan Cheese (2/3 cup).
step 9
Roast in the oven for 25-30 minutes or until crispy.

Serve immediately as is or with with chopped Fresh Chives (to taste) or Sour Cream (to taste). Enjoy!
