Zingy Avocado Citrus Couscous Salad

A light couscous salad made with wonderful fresh ingredients, delightful summer flavors and a citrus dressing to top it off. Goes perfectly with chicken, fish or tofu, or simply as it is for a light meal. Serves 4 as a side dish and 2 as a main dish.

Cooking Instructions

step 1

Stir a drizzle of Olive Oil (as needed), Salt (to taste), and Ground Black Pepper (to taste) into the Couscous (1 cup).

step 2

Pile the couscous into a salad bowl, then layer on the Avocados (2), Oranges (2), and Apple (1), then sprinkle over the Sesame Seeds (2 tsp) and Fresh Parsley (to taste).

step 3

Mix together the juice of the Orange (1), juice of the Lemon (1/2), Olive Oil (2 Tbsp), Salt (to taste), and Ground Black Pepper (to taste) in a small bowl and pour into a small jug or jar to serve alongside the salad.
